Apples are synonymous with Autumn and being from Co.Armagh Bramley apples in particular . For me the Bramley is the best apple for cooking with , it’s tart, cooks to a meltingly soft texture and is equally good in sweet and savoury recipes. The classic of course being an apple tart and with roast pork apple sauce is a must .
Crab apple jelly is a delicious accompaniment to roast meats, cooked ham or cheese . Not difficult to make ( if you know how ) but requires a bit of time and froward planning as it’s always best made over two days to let the juice drip slowly through the jelly bag ideally over night to get every last drop and to keep the jelly crystal clear.
