January is a month for really great citrus fruits from Spain and Italy . I had the pleasure last year of a visit to Sicily and witnessed for the first time the wonderful orange tree orchards although without fruit in summer time. Seville oranges usually arrive here from Spain ( if you happen to be in the South of Spain over winter you can see the oranges growing in the streets ) in early to mid January and have a very short season , a few weeks only . Making marmalade is a labour of love, it does require a significant amount of time but it can be prepared the day before cooking to make the task less daunting and the fruits of your labour, so to speak, will be well worth the effort. There is no comparison to home made marmalade and you can make a year’s supply on one go.
