Raspberries – In Season Now
Summer is fast coming to an end but there is still time to make the most of delicious summer soft fruits.
Look out for locally grown raspberries to make my quick and easy sponge cake which makes a lovely dessert.
I love to eat with the seasons and we are so lucky here in Northern Ireland to have delicious locally grown fruit to bake with.
Lemon and Raspberry Layer Cake Recipe

I‘ve been making Lemon and Raspberry Layer Cake for years, generally in the summer with strawberries or raspberries and a dollop of homemade jam.
I often make it for birthdays (as indeed my mother always made this cake for my own birthday in June) and made it for my twin boy’s christening on a larger scale.

Friday morning’s class was very enjoyable. The visit to your local orchard really set the scene! Michelle and her husband gave us a great insight into life in the orchard! It was lovely to meet them and learn about the upcoming apple harvest.
As always your class was an inspiration; I always enjoy your demos.
Well done and thank you!
