Banana & Pecan Bread

This Banana & Pecan Bread Recipe is easy and delicious and always popular in our house. It’s a great way to use up ripe bananas and can be made from store cupboard ingredients.

Banana & Pecan Bread recipe

Servings: 8

Cooking time: 1 Hour

What you’ll need

2lb Loaf Tin

Ingredients – Banana & Pecan Bread

  • 125g soft butter
  • 125g light brown sugar
  • 2 large / medium eggs
  • 200g plain flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • Pinch salt
  • 4 – 5 ripe bananas
  • 60g Pecans roughly chopped


  1. Preheat oven to 160°C Fan
  2. Butter a 2lb loaf tin and line the base and sides with baking parchment.
  3. Beat the softened butter and sugar together until light and fluffy.
  4. Then add the eggs one at a time and beat again until fully incorporated.
  5. Sieve in the flour, baking powder and soda and fold into the mix.
  6. Then fold in the mashed bananas, pecans and cinnamon.
  7. Pour into the tin and bake for about 1 hour until golden and firm.
  8. Cool in the tin for 10 mins, then remove to a wire rack.

This Banana & Pecan Bread will keep well for a few days.

It’s best to use really ripe bananas but they don’t need to be blackened.

I like pecans but it will be equally delicious without nuts. Or you can add walnuts instead or dark chocolate chips.

Friday morning’s class was very enjoyable. The visit to your local orchard really set the scene! Michelle and her husband gave us a great insight into life in the orchard! It was lovely to meet them and learn about the upcoming apple harvest.
