Classic Victoria Sponge Cake with Homemade Jam and Fresh Cream

A classic Victoria Sponge Cake is great for any occasion and easy to make when you know how.

Servings: 8

Cooking time: 35 minutes

What you’ll need

  • 2 x 8” sandwich tins, buttered and lined.

Ingredients – Classic Victoria Sponge Cake

  • 8oz self-raising flour
  • 8oz caster sugar
  • 8oz very soft butter
  • 4 medium or large eggs at room temperature
  • 1 tsp vanilla extract


  • 250ml double cream
  • Jam


  1. Preheat oven 180°C conventional or 160°C fan
  2. Using a food mixer with the paddle attachment, beat the butter and sugar together until pale and fluffy.
  3. Add the salt and vanilla.
  4. Then begin adding the eggs (break each egg into a little bowl first) one at a time and beat until each egg is incorporated before adding the next.
  5. If the mixture starts to curdle, beat in a little of the flour.
  6. Sift in the flour and fold in using a large metal spoon.
  7. Divide between the cake tins. Make a little dip in the centre.
  8. Place in the oven and bake for 30 – 35 minutes or until golden and the top springs back when you press it gently.
  9. Do not open the oven for at least 20 minutes or you risk the cake sinking.
  10. Leave a few minutes, then remove from tins and cool on a wire rack.
  11. When you are ready to fill your cake whip the cream until soft peak with a little icing sugar.
  12. Place the first cake layer on a plate, generously spread with jam then cover with the cream and put the second layer on top.
  13. Sprinkle the top with icing or caster sugar.  
  14. This is best eaten on the day.

Notes – Classic Victoria Sponge Cake

A classic Victoria sponge cake is made with equal quantities of flour, butter and sugar.

You could just fill the cake with jam or buttercream and jam would also be delicious.

For the best flavour always use butter.

Always have all of your ingredients at room temperature before you start. The butter should be really soft.
