Meringue Roulade with Strawberries & Cream

Meringue Roulade with Strawberries & Cream is a perfect summer dessert when the strawberries are in season. Ideal for a party or a BBQ. The rolling up can seem daunting but be brave !

Servings: 6-8

Cooking time: 30 minutes + cooling

What you’ll need

Swiss roll tin 8″ x 12″

Ingredients – Meringue Roulade

  • 4 egg whites
  • 180g caster sugar
  • 1 tsp corn flour
  • 1 tsp lemon juice or white wine vinegar


  • 1-2 packs strawberries
  • 300ml double cream, whipped

  1. Preheat oven to 160°C
  2. Line a Swiss roll tin approx 8″ x 12″ with baking paper and lightly oil.
  3. Using an electric mixer, whisk the egg whites with the vanilla and vinegar or lemon juice until soft peaks are formed, whisk in half the caster sugar.
  4. Add the corn flour to the remaining sugar then add also and whisk until stiff and glossy (a few minutes).
  5. Spoon into the prepared tray and spread out evenly.
  6. Place in the oven and cook for 30 minutes or until it has formed a crust and peels away from the paper.
  7. Leave to cool in the tin for a few minutes then turn out onto a sheet of baking paper or tin foil that has been well dusted with icing sugar and leave to cool completely.
  8. Spread over the whipped cream, scatter the strawberries on top.
  9. Then roll up using the long edge and the paper to guide you. Transfer gently onto a serving plate and use a serrated knife to cut.
  10. Sprinkle icing sugar on top and serve with some extra strawberries.

Roll the roulade along the long edge. Don’t worry if it cracks you won’t usually notice when you turn it over. Use the paper to keep the roll tight.
