Tomato Sauce

This is a quick and easy tomato sauce which I make practically every week for my boys. It’s great with any dried pasta shape such as Penne or Fusilli.

What you’ll need

Heavy based saucepan

Ingredients – Tomato Sauce

  • 1 x 400g tins plum tomatoes chopped
  • 3 or 4 cloves garlic, peeled
  • Olive oil
  • Salt and pepper
  • 450g dried pasta

Method

  1. In a large shallow pan, heat a little olive oil and gently fry the garlic until starting to go golden. 
  2. Add the tomatoes.
  3. Break up the tomatoes with a spoon and season with salt and pepper and a 1/2 teaspoon of sugar.
  4. Cook slowly on the lowest heat for 30 -40 minutes until thickened.
  5. Check for seasoning.
  6. Meanwhile, bring a large pan of salted water to the boil and cook the penne until al dente.
  7. Strain (keeping the excess water), use some of the pasta cooking water to lighten the sauce.
  8. Add the pasta to the sauce, season the penne with salt, pepper and olive oil.
  9. Add some basil if using and serve with lots of freshly grated parmesan and a good drizzle of really good extra virgin olive oil.

Notes

You can easily adjust this recipe. It would be delicious with some fresh herbs such as oregano which I would add at the start with the garlic. Or fresh basil added at the end.

You could also add a fresh red chilli for some heat. Just finely chop it and cook with the garlic at the start.

When cooking pasta always keep some of the cooking water to add to the sauce. This lightens the sauce and makes it more delicious.

You could stir in a knob of butter at the end to make the sauce richer.

I like the Mutti tinned tomatoes which come from Italy and for pasta I like Rummo and DeCecco.
